Nut Butter Balls (A.K.A. Yogi Balls)

Ingredients: This is a recipe my Nutritionist shared with me that is suitable for most diabetic, sugarless and Vegan diets. These little protein balls will chase away even the worst cravings for something sweet and decadent without the after effects. I have made numerous batches of these delicious treats and have shared them with family, friends and acquaintances and the response has been an unanimous two thumbs way, way up.

  •  1/2 cup sunflower seeds and 1/2 cup of sesame seeds
  • 1/2 cup nut butter...almond cashew or mystery
  • 1/2 cup unsweetened carob or cocoa powder
  • 1/4 cup wheat germ or oat bran
  • 1/4 cup unsweetened coconut or sesame seeds for coating
  • 1/4 - 1/2 cup maple syrup (Depending on how sweet you want your treat)

Grind the sunflower and sesame seeds into powder using a coffee grinder or other suitable device. Combine all of the ingredients into a large bowl or food processor and mix well. When the ingredients are blended grab small pieces off and roll them into little balls approximately 1 inch in size. You can then roll them in some of the coconut or sesame seeds. Refrigerate and eat when chilled....however I often don't wait!!! ENJOY! ​ Love Sue
